Burr shape is a description, not a verdict
Flat and conical burrs describe the geometry of the grinding parts. Both appear in grinders sold for serious home coffee use. Baratza's own range includes both shapes, with different burr materials and adjustment mechanisms. Its flavor descriptions are manufacturer characterizations; they are not evidence that every flat burr tastes one way or every conical burr tastes another.
Our recommendation is to begin with a problem you can observe: your current grinder cannot tune espresso closely enough, makes changing settings awkward, or is a chore to empty and clean. That gives you something to verify in a replacement. Spending more on a different burr shape without an identified problem makes it difficult to judge whether the purchase helped.
Look at adjustment where you will actually use it
A stepped grinder has fixed positions; a stepless adjustment allows movement between them. Baratza explains that the distance between settings matters, particularly for espresso. Some grinders use separate coarse and fine controls or different adjustment spacing across their range. The total setting count therefore does not reveal how much useful control exists around your normal recipe.
Ask to see the controls move from a filter setting to espresso and back. Can you record a number, and is there a second dial or revolution to remember? For a shared kitchen, our preference is a setting system everyone can reproduce. Check the manufacturer's procedure before adjusting with beans inside; do not assume every grinder should be adjusted in the same operating state.

Separate the grind size from the amount of coffee
Grind adjustment and dosing are different controls. A timer chooses how long the motor runs; a weighing system measures an amount. As one documented example, OXO's grinder with a built-in scale offers cups and grams modes, plus a manual mode in which the scale is disabled. A scale on the specification sheet does not mean every operating mode doses by weight.
For espresso practice, Baratza recommends keeping the dose consistent while changing the grind and recording the result. Our suggested comparison is three repetitions of your normal dose, followed by a change of brewing method. Observe the weighing steps, grounds transfer, and cleanup. If you already have a suitable scale, built-in weighing may save a step, but it is not automatically a reason to replace equipment that works.

Read the cleaning instructions before the first purchase
Cleaning access is worth checking while you still have choices. OXO's manual describes a removable upper burr and dry brushing of the burrs and chute; it prohibits water inside that grinder. Baratza separately warns against using rice as a cleaning substitute. Follow the instructions for the exact model instead of transferring an internet cleaning trick to a different mechanism.
Look at how the hopper comes off, what happens to beans still inside it, and which parts are removable by the owner. Our buying check is simple: open the manual and find the routine you would perform after a messy bag of beans or a blocked chute. If the steps seem unmanageable, seek a simpler design or a clear service option before ordering.

A supported grinder may be worth keeping
Before replacing a grinder, check whether cleaning, calibration, or a replaceable part can address the problem. Baratza publishes repair resources and describes parts availability for current and some discontinued models, while noting that availability varies. That is useful evidence of a service path, not a promise that any particular machine will last a specified number of years.
For a new purchase, search the exact model's parts list and regional support page. Confirm who performs repairs, whether owner maintenance affects the warranty, and how the grinder would be shipped for service. Our preference is a purchase with a clear route back to working condition. Keep the same standard whether the candidate uses flat or conical burrs.
